Store- Bought BIKO!

Have you ever had biko before? If you're Filipino I assumed that you know what I am talking about. Biko is one of my all time fave merienda (snack) since when I was a kid. Biko is usually served during birthday parties, fiestas, Christmas, New Year and other celebrated events in Philippines. It's been years since I had my last biko, and I am glad that I've found a place nearby that sells Filipino delights.

What is biko? Biko is a cake made from glutinous rice cooked in sweetened coconut milk and topped with latik (curdled coconut cream). If you would like to try and make this at home, here's the recipe for yah.

Ingredients

* 4 cups of sweet rice ( sticky)
* 4 cups water for cooking the rice
* 1lb. brown sugar
* 2 cups coconut milk
* 1 bottle jackfruit ( langka)(optional)
* condensed milk ( toppings, optional)

Directions

1. Cook the rice in the rice cooker while waiting boil the coconut milk and mix with the sugar. keep stirring until it gets very sticky. Scoop some juice for toppings. Pour the jackfruit and mix with the rice. Bake if you want ( 20 mins.) then put the toppings

  23. hello dhemz, I think it's better to cook the sticky rice with the coconut milk and brown sugar, instead of just plain water. that's how we do it here in the Phil.
